Vineyard Notes: Located off of Fiddletown Rd, outside of Plymouth, this vineyard is farmed by Josh Lyman, whose family has been farming potatoes in Idaho since the late 1800’s. They farm about 260 acres in the foothills, but have only six rows of Vermentino, about two acres - all sustainably farmed.
Cellar Notes: We hand harvested three tons of fruit & destemmed all of the grape clusters to the drain press; the juice settled in tank before transferring to another tank & two neutral barrels for native fermentation. After fermentation, the wine was racked to neutral oak barrels for six weeks prior to bottling on 11/20/26.
Tasting Notes: A little subtler than some previous vintages, this wine nevertheless remains true to its variety, with honeydew melon, freesia & green papaya aromatics. The palate is mellow, citrusy, with lime zest & mandarin orange & river rock finishing strong.
Pair With: Pesto based sauces, Vegetable quiche, Chicken tacos, Grilled italian sausage
