Vineyard Notes: The Walkers have been growing grapes in El Dorado County since the 1930’s. Their 220 acre property, sitting at 2100 ft of elevation, is planted to Riesling, Chardonnay, Barbera & Petite Sirah. The vineyard soil is a coarse loam with lots of sand.
Cellar Notes: We harvested four tons of fruit. The low pH made this a good candidate for concrete egg fermentation, so we destemmed to press & pressed to tank for cold settling before racking the juice to our concrete egg for native fermentation. Once dry, the wine was rack off of the lees & returned to concrete until mid November, when it was bottled.
Tasting Notes: An intensely acid-driven wine - as Riesling should be - our first vintage has classic varietal floral notes, with apple blossom predominating. Fruit notes are mainly white stone fruits, some Meyer lemon & kiwi. The palate is racy, with more floral notes: apple blossom, borage & jasmine, with smooth white peach on the finish.
Pair With: Sashimi, ceviche, and memphis-style hot chicken
