Varieties: 31% Riesling / 29% Carignane / 14% Chardonnay / 14% Grenache / 6% Pinot Noir / 6% Cabernet Sauvignon
Cellar Notes: 2025 marks our 5th vintage of strange coferments & it is one of the more complex blends – as well as one of the more complex wines – of the bunch! First, we made a cofermentation of Riesling & Carignane berries, with the addition of extra Riesling juice. The second coferment is equal parts Chardonnay & Grenache berries. Third, we included half of a barrel that was equal parts Cabernet & Pinot Noir! These were then blended in February & aged in neutral oak for 3 months, until bottling in May.
Tasting Notes: One thing I love about these blends is that you never really know how the grapes will react together. In some, one or two of the grapes become dominant or are at least identifiable. Not so here. The aromas are nicely balanced, with a floral edge, but it is not reminiscent of Riesling particularly. There are good citrus qualities – blood orange & satsuma – as well as tart cranberry, along with some nice warm spices. The palate is quite lively, with cranberry, black olive, hibiscus tea & subtle tannin. This CoCo has a little more structure than many previous versions & should make for a very versatile pairing wine!
