Vineyard Notes: Located off of Fiddletown Rd, outside of Plymouth, this vineyard is farmed by Josh & Julie Lyman, whose family has been farming potatoes in Idaho since the late 1800’s. They farm about 260 acres in the foothills, but have only 6 rows of Vermentino, about 2 acres. Sustainably farmed.
Cellar Notes: We harvested 3 tons of fruit & destemmed to press; then settled in tank before transferring to another stainless steel tank for native fermentation. Fermentation took almost 3 weeks, at which point the wine was racked to neutral oak barrels for 2 months, until it was all blended together for bottling in January 2025.
Tasting Notes: This wine has the classic loud aromatics of the variety, with tropical overtones of mango & papaya, citrusy kumquats & an herbal lemon verbena topnote. The palate is a touch brighter than Vermentino sometimes is, with a zesty, breezy saline quality.
