Vineyard Notes: Located off of Fiddletown Rd, outside of Plymouth, this vineyard is farmed by Josh & Julie Lyman, whose family has been farming potatoes in Idaho since the late 1800’s. They farm about 260 acres in the foothills, but have only 6 rows of Vermentino, about 2 acres. Sustainably farmed.
Cellar Notes: Received 5 tons of hand-harvested fruit; destemmed 1 ton into a bin with no additions for natural fermentation on skins. The remaining 4 tons were routed directly into the press after destemming. We racked the juice into our new concrete egg for natural fermentation! After fermentation, the wine was racked to stainless steel for settling and elevage. The wine was cold stabilized then bottled with only light filtration and a minimal sulfur add in January 2024.
Tasting Notes: Fermenting in our concrete egg gave this wine more aromatics and a round mouthfeel. Bold tropical fruits are on the nose. There is guava, pineapple, a little banana, ripe pear, vanilla & coconut all intertwined with a phenolic richness. In the mouth the wine is surprisingly light-bodied, but loses no complexity, with many of the same tropical flavors holding sway among prickly saline & spicy elements.
