Vineyard Notes: The Heringers have been farming in Clarksburg since 1868. In the early 1970’s they were one of the first to plant vineyards on their property, pioneering the Clarksburg AVA. Now in their 7th generation, they grow many grape varieties in many locations in the Sacramento River delta, all farmed sustainably.
Cellar Notes: We received almost 3.5 tons of fruit, which we destemmed & pumped into a concrete egg for fermentation. The wine took 10 days to finish fermenting after which it was pressed to a combination of neutral & new American oak. It aged for 20 months before being bottled unfiltered.
Tasting Notes: Rich dark fruits - fig jam, mulberry - predominate, with an edge of sun-dried tomato & warm spices. The palate is bold & astringent, with toasted cardamom, clove, & espresso notes carrying through to a rich finish.
Pair With: Mole enchiladas, roasted red peppers, venison sausage
