Vineyard Notes: For 2022 we decided to go with only the Shaste Vineyard for our high-end Cabernet Sauvignon. The Shaste Vineyard is located on a steep hillside on the eastern side of Sonoma Mountain which will provide fruit with high acid & structure that we are searching for. It is farmed by Isaac Jenkins, whose family has been farming grapes in Sonoma for three generations.
Cellar Notes: These grapes came in with great acidity, but a touch high in sugars so we took steps to bring the brix down before fermentation. After pressing, the wine went into 40% new French oak barrels, where it developed for 40 months before being bottled in January 2026.
Tasting Notes: This Cabernet Sauvignon stays true to the Sonoma county profile, with bright black currant, blueberry & blackberry fruits, black tea, cola & eucalyptus on the nose. The palate has great density of flavors, while the acidity keeps it light as it finishes with decisive tannic structure.
Pair With: Braised short rib, Eggplant parmesan, Stuffed portobello
