Vineyard Notes: A small backyard vineyard on the Sonoma side of Los Carneros (the southernmost & coolest section of Napa & Sonoma Valleys), very close to San Pablo Bay. 25 rows of vines planted in 1986. This area benefits from the almost daily morning fogs, which make it ideal for cool-climate varieties such as Pinot Noir.
Cellar Notes: We received approximately three tons of fruit which we foot-treaded to three macrobins for fermentation. Punched down 2-3 times daily until dryness, on 9/20/21, then pressed to five neutral oak barrels & one stainless steel drum for elevage. The wine was racked from barrel, sparged & bottled unfiltered in July 2023.
Tasting Notes: Another varietally true Pinot, this wine shows bright cherry fruits, with an earthy underpinning for coriander, bay leaf & pine cone. The tannins are fine-grained & emphasize the acidity & herbal notes in the palate, with forest floor, clove, pine sap all present.
Label: We picked flamingos for our Pinot Noir because Pinots are always light, airy & fruity yet grounded with earthy notes. For 2021, our flamingos are traveling through Big Sur - a classic California staple!
Pair With: Duck breast, Grilled salmon, Mushrooms, Pate
