Vineyard Notes: After years of trialing Cabernet Sauvignon from a variety of areas surrounding Sacramento, we finally made the decision to go for some high-end Cabernet Sauvignon from one of the most well known wine regions in the world: Sonoma County. We brought fruit in from 2 vineyards, the Shaste Vineyard & the Zagari Vineyard, both farmed by Isaac Jenkins. The Shaste Vineyard is located on a steep hillside on the eastern side of Sonoma Mountain, with fruit giving us the high acid & structure that we were searching for. The Zagari Vineyard, meanwhile, is on the valley floor south of Glen Ellen & provides grapes with mouth-filling fruit & mineral notes.
Cellar Notes: The vineyards were harvested 5 days apart, with the warmer valley-floor Zagari coming in first. They were destemmed to bins for native fermentation & after long slow fermentations the wines were put separately into approximately 50% new oak barrels. In March 2022, we tasted & decided on the final blend of the two, then racked them together & returned them to barrel, where they matured for another 24 months. The wine was bottled unfiltered in May 2024.
Tasting Notes: The aromas are unmistakenly Cabernet Sauvignon: black currant, blackberry, eucalyptus. The palate is quite full, with bold fruits, crisp acidity, a bold tannic structure & extremely long finish.
