Vineyard Notes: Fields Family Vineyard was the 1st certified organic vineyard in the Lodi appellation. They have about 10 acres of Syrah, and a few other varieties, all planted around 1990. The vineyard is just west of 99, just south of Acampo.
Cellar Notes: We received just over four tons of hand-harvested fruit early in the day. The grapes were destemmed to the press for a very short maceration time to get the beautiful color. The juice was cold settled for three days then brought back up to temperature to begin fermentation. At 1.5 degrees Brix, we bottled 42 cases to complete fermentation in bottle. The wine then matured until April 2021, when we riddled & disgorged the bottles, using the still Rosé of Syrah to top them.
Tasting Notes: Because of the nature of pet nat (each bottle is essentially a separate fermentation), expect there to be fairly significant bottle variation. However, the wines should all have fairly similar general attributes, such as light bubbles, bright red fruits, great acid & a long finish.
How to Make a Pet Nat: When your wine is very nearly finished fermenting, put it in a nice heavy bottle and let it sit. The wine will complete the fermentation in the bottle, converting the small amount of sugar into alcohol and carbon dioxide. With no place to go, the CO2 is absorbed into the wine, resulting in a natural fizziness. After several months of bottle conditioning, the yeasts are forcibly expelled in a messy and time-consuming process called disgorgement. Then the bottles are capped and ready to enjoy!
