This wine has all the hallmarks of a nouveau wine: bold tropical aromas, with notes of banana & guava.
Cellar Notes: 3 tons of fruit was harvested around 3 am in Amador County. ‘Nouveau’ represents the style of winemaking: the clusters were dumped, without destemming or crushing, into open-top tank with dry ice & capped with CO2 & then covered. CO2 was topped up every day to displace oxygen in the tank. Carbonic maceration took about 2 weeks then the fruit was pressed to tank & inoculated to begin alcoholic fermentation.
In short, a nouveau wine is a red wine that is made, bottled, and released in the same year. Beaujolais nouveau originated in France and is celebrated with the release of the wine on the third Thursday in November with lots of parties and wine drinking to celebrate!
Tasting Notes: Notes of peach, strawberry & bubble gum are present. The wine is very lively & playful on the palate, hitting all corners of the mouth with variations on those fruit characteristics.
