Vineyard Notes: Big Oak Vineyard, Sacramento County. Planted 1998, lying south of Grant Line Rd along the Cosumnes River just southeast of Elk Grove. With fertile floodplain soils providing ample nutrients, this vineyard also benefits from the nearby Sacramento River delta to moderate the long hot summer days.
Cellar Notes: We left the picked fruit in bins overnight to allow some skin contact & oxygenation & pressed the next morning. About half of the juice was racked to barrel for fermentation; the other half was fermented in stainless steel tank. The tank-fermented Chardonnay was given 2 vigorous aerations during fermentation to encourage oxygenation. After fermentation was completed, the wine was all racked together & put back to barrel for two months before being racked back to tank for cold stabilization & bottling.
Tasting Notes: This is a crisp & clean Chardonnay, starting off with bright apple cider & honeysuckle notes on the nose. The palate is plush & velvety, with McIntosh apple, quince & puff pastry filling the mouth.
