A skin-fermented white wine with notes of grapefruit, honeysuckle, and tea.
Vineyard Notes: Planted 1998, lying south of Grant Line Rd along the Cosumnes River just southeast of Elk Grove. With fertile floodplain soils providing ample nutrients, this vineyard also benefits from the nearby Sacramento River delta to moderate the long hot summer days.
Cellar Notes: Fruit was destemmed into macrobins with dry ice, then were allowed to ferment with feral yeasts. Bins were punched down 2-3 times daily. After dryness, the wine was left on the skins an additional five days before being pressed to barrel & allowed to go through spontaneous malolactic fermentation. The barrels were stirred once before racking & bottling.
Tasting Notes: A unique wine among our offerings, this skin-fermented Pinot Grigio has lovely aromas of grapefruit & honeysuckle. The skin contact contributes interesting nutty & green tea aromas & enhances the mouthfeel, making this a big mouth-suffusing wine.
