Vineyard Notes: Lyman Vineyards, Amador County. Located off of Fiddletown Rd, outside of Plymouth, this vineyard is farmed by Josh & Julie Lyman, whose family has been farming potatoes in Idaho since the late 1800’s. They farm about 260 acres in the foothills, but have only 6 rows of Vermentino, about 2 acres. Sustainably farmed.
Cellar Notes: We received 5 tons of hand-picked grapes. Approximately 5/6th of a ton was destemmed into a 1-ton bin for native fermentation, which took 9 days. It was then pressed to tank & put into 2 neutral barrels for 2 months of aging. At that point the wine was put through a very light filtration & bottled with only a small sulfur addition.
Tasting Notes: One of the most interesting wines we’ve made recently, its aromatics remind you of mangos, clementines, green tea, honey, cantaloupe & oregano. It is weighty in the mouth, with guava & quince paste notes, & savory phenolic finish.
